Instructions
- Heat the olive oil in a pan over medium heat. Add the chopped onions and sauté until they turn translucent.
- Add the minced garlic to the pan and sauté for another minute.
- Next, add the chicken breasts to the pan and season with salt and pepper. Cook until the chicken is no longer pink in the middle.
- Remove the chicken from the pan and set aside. In the same pan, add the rice and stir to coat in the onion and garlic mixture.
- Pour in the chicken broth and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 20 minutes until the rice is cooked.
- Return the chicken to the pan, stir to combine, and serve.
