Chicken rice


  • 1 cup of jasmine rice
  • 2 cups of chicken broth
  • 2 chicken breasts
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste


  1. Heat the olive oil in a pan over medium heat. Add the chopped onions and sauté until they turn translucent.
  2. Add the minced garlic to the pan and sauté for another minute.
  3. Next, add the chicken breasts to the pan and season with salt and pepper. Cook until the chicken is no longer pink in the middle.
  4. Remove the chicken from the pan and set aside. In the same pan, add the rice and stir to coat in the onion and garlic mixture.
  5. Pour in the chicken broth and bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 20 minutes until the rice is cooked.
  7. Return the chicken to the pan, stir to combine, and serve.
