Instructions
- Heat a tablespoon of oil in a large skillet or wok over medium heat. Pour in the beaten eggs and scramble until fully cooked. Remove them from the pan and set aside.
- Add another tablespoon of oil into the pan. Add the onion, garlic, carrot, and green bell pepper to the pan. Stir-fry for about 5 minutes until the vegetables are tender.
- Stir in the cooked rice, scrambled eggs, and soy sauce. Mix well and cook for another 3 minutes.
- Drizzle with sesame oil and sprinkle with chopped green onions before serving.
- Season with salt and pepper to taste.
- Serve hot.
